Pineapple Marinated Pulled Pork w/ Hoisin Pineapple BBQ Sauce ...

We?re eating pineapple marinated pulled pork tossed with a pineapple hoisin bbq sauce on fresh ciabatta bread w/ creamy, tangy Asian-style coleslaw.

Having been raised in Virginia, I?ve eaten my share of pulled pork and know and love it intimately. Especially the tangy North Carolina style that uses a vinegar based barbecue sauce. Every time I go to make pulled pork my heartstrings almost always win out and I make some variation of this style. Fortunately for you guys, I persevered this time! Screw you, nostalgic heartstrings. Who needs flavors of home when you can have flavors of Asia all up in your pulled pork sandwich. ;) Hell, I should have just pickled some vegetables, thrown on some cilantro and called this a ghetto banh mi? but I didn?t. I let some of that damn nostalgia come in and topped my sandwich with some good old coleslaw and hot sauce ? just like the sandwiches I at so many of as a child.

In addition to the flavor differences, my preparation methods are very different for this version of pulled pork. First off, instead of marinating the pork in a dry rub, I marinated it in a combo of minced uber-sweet fresh pineapple and loads of garlic for about 24 hours. Secondly ? instead of my traditional tried and true methods of low and slow smoking or oven-roasting, I turned to my crockpot. I mean, February is, after all, slow cooker month! Why not celebrate it by letting my pork shoulder turn into dinner while I go out and get drinks, er, do work at an art festival. ;) I put the marinated shoulder into the slow-cooker with some water and a tub of Knorr Homestyle Chicken Stock, turned that puppy on then walked away. Did you guys get a chance to celebrate the fact that February was slow-cooker month? It?s not to late ? in case you forgot it?s a leap year this year! You have a whole day to hop on it! ;)

Pineapple Marinated Pulled Pork with Hoisin-Pineapple Bbq Sauce

For the Pork:
3 cups fresh ripe pineapple, minced or food processed
cloves from 1 bulb garlic, peeled & minced
2 tbsp sambal oelek
2 tsp kosher salt
1 tsp freshly cracked black pepper
1 (approximately 5lb) bone-in pork shoulder
butcher's twine
1 1/2 cups water
1 tub Knorr Homestyle Chicken Stock

For the BBQ Sauce:
1/2 cup hoisin sauce
1/2 cup rice wine vinegar
1/2 cup fresh ripe pineapple, pureed
1/2 tsp chinese five spice

In a bowl, mix together the first 5 ingredients for the pork to create the marinade. Butterfly the pork shoulder, then stuff with a cup of the marinade. Using butcher's twine, tie the pork shoulder back into one even roast. Place stuffed shoulder into a larger resealable plastic bag. Pour the rest of the marinade over the roast, coating evenly. Seal the plastic bag, removing as much air as possible. Marinate pork for 12 to 24 hours, refrigerated.

Place the pork, marinade, 1 1/2 cups water & Knorr Homestyle Chicken Stock into a slow cooker on the low setting. Slow cook, covered, 8-10 hours or until the pork is falling apart. Remove from slow cooker, cut off butchers twine, then shred the pork, discarding any excess fat or bones.

In a mixing bowl, whisk together all ingredients for the barbecue sauce. Toss the pulled pork with the barbecue sauce until moistened to desired level. Taste and adjust season with more sauce or salt and pepper as desired. Great served on ciabatta rolls with an Asian-style slaw.

The bee has been associated with the Goddess and Priestesses of the Goddess for thousands of years. The most famous culture that worshiped the bee was the Minoan culture on the island of Crete. As a symbol of The Mother Goddess, bees represented fertility and healing. Since honey has antibacterial properties, it was used in many healing remedies, this made honey sacred. It was also used during ritual by the Bee Priestesses who were called melissae which means "bees". The tombs at Mycenea were shaped like beehives, as well as the omphalos at Delphi where the famous Oracle at Delphi recited her prophecies.

In Knossos, jars were found which contained honey, and were said to be used during summer festivals. Honey was known as "the nectar of the Gods" in the ancient world and was seen as sacred all the way back to Neolithic times. The Bee was said to be viewed as a Mother Goddess and creator of life. Since bees gather nectar from flowers, and then create this wonderfully healing, sweet and sacred substance, they were highly revered. In the Homeric hymn to the God Apollo, it is said that his gift of prophecy came to him from three bee maidens. The Bee was also revered in other cultures such as in ancient Egypt. The Bee was associated with Kingship in ancient Egypt, it is said that there was even a bee King. In the ancient Mayan world, bee motifs were found, as honey was seen as food of the Gods.

Goddesses associated with the bee are Persephone, Demeter, Artemis, Aphrodite, Rhea, Cybele and Potnia Theron, which is the Cretan "Mistress of Animals". In Ephesus where the remains of the Temple of Artemis was found along with the great statue, Artemis of Ephesus, there were bee motifs found on the statues legs and waist. Statues of the Anatolian Goddess, some believe Cybele originated in Anatolia, were shown with the Goddess wearing what looks like a beehive on her head. Possibly as some kind of crown, as some ancient Priestesses were sometimes called "The Queen Bee"

As you can see the bee was a sacred and highly revered animal in the ancient world, along with their highly prized honey. We should honor the bees as well today as givers of life as they pollinate our crops and give us food. Is it said to me to hear of all the bee deaths over the recent years. As followers of the Goddess and worshipers of nature, we need to be honoring animals in the same way the ancient priestesses before us did.

Kid Rock gets wild and free for Romney event

(AP) ? For his Michigan finale, Mitt Romney wanted Kid Rock.

The GOP presidential candidate, after all, begins and ends almost every event with Kid Rock's song "Born Free."

So Romney's people reached out to Kid Rock's people. The answer came back: The rocker-rapper, famous for songs like "Bawitdaba" and "Cowboy," would consider playing "Born Free" at Romney's last campaign rally before Tuesday's primary. But only if he could talk to Romney first.

The former Massachusetts governor landed in Michigan on Thursday, climbed into a black Suburban with two aides, and drove to Kid Rock's house in Clarkston, Mich., just northwest of Detroit.

"I asked him whether he might come here tonight," Romney explained Monday to the crowd gathered at the Royal Oak Music Theatre.

Romney got a grilling from the rocker for more than an hour, campaign aides said. Would he help the state of Michigan? Romney said he would. Would he help the city of Detroit? Kid Rock himself had just committed to help raise a $1 million for the struggling city's symphony. Romney said yes. And the singer born with the name Bob Ritchie pressed Romney about how he would support U.S. service members as president.

Romney left without an answer about the performance. The next day, he received an email: Kid Rock was in.

Monday night, after introductions from Michigan's lieutenant governor, attorney general and governor and from Romney's wife, Ann, the obviously buoyant candidate played warm-up act.

He gave his standard campaign speech and then announced: "I'm happy to introduce a son of Detroit, a friend, a guy who makes great music, who introduces me by DVD everywhere I go ? Kid Rock!"

Kid Rock performed the song ? "wild, like an untamed stallion ... I was born free" ? as the meticulously dressed Romney watched.

Then, Kid Rock immediately left the stage.

Additional numbers may have been problematic. Many of his hits are peppered with obscenities and references to drugs, alcohol and sex. Kid Rock himself has a bad-boy image, though he often mixes it with patriotism.

Romney, who's been emphasizing family values of late as he works to compete with socially conservative rival Rick Santorum, said later that he didn't worry about Kid Rock's mores.

"I think that he makes some pretty good music and I like listening to his music," Romney told Detroit radio station WXYT when he was asked if Kid Rock portrays values that people should emulate.

"And when I listen to the people who provide music I don't actually try to assess their personal family values," he said. "I listen to their music."

What exactly is life coaching, besides the fastest growing field on the planet? And why would somebody want to hire another person to ?coach? them on how to live their own life? One general definition of life coaching is that it helps clients establish goals, and achieve them. Goals can be related to personal life, business and career, relationships, family, parenting, health, spirituality, and more. I have heard Dr. David Wolf say many times that ?In the game of tennis, if I am committed to mediocrity, then I do not need a coach. The top players all have coaches, because they are committed to excellence.? Life coaching is the process of committing to excellence in any or all areas of our lives by creating a structure of support and accountability, and an atmosphere of challenge and guidance.

Coaches assist their clients in determining what they want to create with their life energy, and then actualize it.

It is often said in modern spiritual conversation that ?we have all of our own answers.? I am not discounting this, and at the same time, if we honestly assess our lives and where we are at, are we living one-hundred percent on purpose? Do we have the relationships that we want, the communication that feels empowering? Are we creating the income that we desire doing what we love? Inside of us, we often know what we need to do to create value in our lives, yet, human tendency can lead to procrastination, fear-based thinking, devaluing of ourselves, or of our dreams.

When we make the choice to work with a life coach, we are making the choice to actualize that inner knowing, to leave no room to hide, or to play small. A good coach will know if we are playing the self-defeating games most of us play and will assist us to stay on track until we create what we want. And when we create what we want, then there becomes a whole new level of excellency to achieve. We raise the bar.

In a sense, I went to personal life coaching because I had goals in many of the life areas that I mentioned. And for me, part of my process was also to realize that there were times when achieving things on the material platform was not nearly as satisfying as I had thought it would be. When life coaching is spiritually based, then it will direct the client towards more eternal, or transcendental goals, which many of us are aware that we have. In this context, our relationship with work, with our families, with our partners becomes properly situated. These areas of our life begin to improve and increase in the service of our larger goal of spiritual awakening and self-discovery, and not simply as ends in themselves. When this occurs, it creates a much more profound consciousness about work, relationships, and all other areas of life.

HONOLULU - Hiroaki Namba scored twice for Yokohama FC in the Japanese club's 2-1 win over the Colorado Rapids in the second semifinal of the Hawaiian Islands Invitational on Thursday night.

Yokohama will play in Saturday's final against Busan I'Park FC (South Korea), which beat Melbourne Heart FC (Australia) 1-0 on Yu Ji-hun's goal in a penalty kick tiebreaker.

Namba headed the ball into the goal in the 56th minute at Aloha Stadium off an assist from Toyoma Uchida. Following a Rapids' foul, Uchida restarted play with a right-footed blast from about 25 yards out. He found Namba near the top of the 6-yard box and his header went to the left of Colorado goalie, Matt Pickens, and into the net.

Namba also scored in the 63rd minute off an assist from Takahiro Nakazato. The ball was sent across the 18-yard box and redirected from Nakazato to Namba, who was open on the far post.

Colorado's Drew Moor scored on a header in the 73rd minute, off a corner kick from Omar Cummings.

In the first semifinal, Jeon Sang-wook made four saves during the penalty kick tiebreaker before Yu Ji-hun's game-winner.

After a scoreless regulation, the teams bypassed overtime and went straight to penalty kicks. Choi Kwang-hee, Yoon Dong-min, Rodrigues Mota Junior and Yu scored for Busan, which converted four of its seven penalty kicks.

Zac Walker, Dusan Bosjnak and Joshua Groenewald scored on their attempts for Melbourne.

Yu's left-footed shot found the right side of the goal, while Melbourne goalie Vendran Janjetovic dived left.

Colorado and Melbourne Heart FC will play in the third-place match before Saturday's final.

Bass Pro Shops coming to Copper Ridge retail development ...

Bass Pro Shops will build a 117,000-square-foot store at Copper Ridge at Northgate in northern Colorado Springs, the first anchor to announce it?s coming to the planned 200-acre retail complex.

Copper Ridge developer Gary Erickson said Wednesday that Bass will break ground in April and expects to open in summer 2013. Copper Ridge, according to Erickson?s latest plan, is envisioned as a 2 million-square-foot retail center, southeast of Interstate 25 and Northgate Boulevard.

In addition to Bass Pro Shops, Erickson disclosed for the first time that a hotel and resort will be part of the project. The Colorado Grand Resort & Hotel, as it?s being called, will feature a 30,000-square-foot, indoor-outdoor water park. The resort ? with what Erickson described as a ?log and rock d?cor? and family-sized, themed suites ? will open in 2014, he said.

The resort will have its own developer, whom Erickson declined to identify until a formal announcement is made, possibly in the next week. He also declined to disclose the number of rooms at the hotel.

In the more immediate future, Erickson said snagging Bass gives momentum to Copper Ridge. Some experts in the commercial real estate industry had questioned whether the complex would ever get off the ground. With news of Bass? commitment, Erickson said other retailers with whom he?s been talking are showing renewed interest.

?I guess we?re kind of proving our point, at this point,? Erickson said of Copper Ridge?s potential.

Bass Pro Shops would be built west of the FedEx campus at Voyager Parkway and Northgate Boulevard.

?They?re the best at their game,? Erickson said of Bass. ?They?re the No. 1 destination retailer that we could have gotten at Copper Ridge. We couldn?t have done better. We?re just completely thrilled that they?ve picked our site.?

Bass, based in Springfield, Mo., operates nearly 60 stores in 26 states and Canada. Despite its name, Bass offers much more than fishing gear; the outdoors retailer specializes in hunting, camping, hiking and boating equipment and apparel, electronics, archery and outdoor cooking, among other items.

The Colorado Springs store will feature a gift and nature center, a boat showroom and Bass? Uncle Buck?s Fishbowl and Grill ? a 15,000-square-foot nautical-themed area that combines dining with a 12-lane bowling alley.

Bass says its stores attract more than 112 million visitors annually; the retailer has one other Colorado store, which opened in Denver in November 2005.

?We are very excited to bring Bass Pro Shops to Colorado Springs and be part of this major development,? Johnny Morris, Bass? founder, said in a statement. ?The area?s long history of great fishing and hunting traditions along with this highly visible and accessible location make it the perfect place to allow us to better serve our many customers and all the outdoor enthusiasts that visit and live in this beautiful part of the country.??

When Erickson and a partner announced plans for Copper Ridge in late 2009, they said it would include so-called destination retailers and higher-end stores.

Their goal, working in conjunction with Colorado Springs city staffers, was to create a retail environment to dissuade Pikes Peak region shoppers from driving to Park Meadows mall and other popular retail centers areas in the Denver area. Keeping shoppers here would stem the ?leakage? of sales tax dollars to the north, Erickson and city staffers have said.

The project?s design has been revamped over the last two years, Erickson said Wednesday, and a Park Meadows architect was brought in to give Copper ridge a new look and feel.

The project still calls for an enclosed mall and an open-air lifestyle center, along with big-box stores, so-called junior anchors, restaurants and smaller shops. But Copper Ridge also now envisions a plaza area for shoppers, a 12-screen movie theater complex and 246 residences, which Erickson said will be built as lofts on the upper floors of retail buildings.

The Copper Ridge property was designated as an urban renewal site in May 2010 by the Colorado Springs City Council ? a controversial decision because the suburbanlike, grassy area lacked rundown buildings and other decaying conditions that are typical of urban renewal projects.

As part of the urban renewal designation, the City Council and Erickson agreed that future property and sales tax generated by Copper Ridge would be earmarked to complete the final northerly leg of Powers Boulevard, which currently ends at Colorado 83. The extension of Powers would run through the heart of Copper Ridge and connect to I-25.

Glitch found in faster-than-light setup

The CERN Neutrinos to Gran Sasso experiment sends muon neutrinos through a tunnel at the French-Swiss border in the direction of a detector in Italy, more than 450 miles away.

Months after researchers reported that they measured neutrinos traveling faster than light, they're finding that the incredible result may have been due to a bad connection rather than a violation of Albert Einstein's special theory of relativity.

The potential instrumental glitches, first reported today by ScienceInsider's Edwin Cartlidge, is due to be addressed on Thursday in a statement from the OPERA Collaboration, the group behind the controversial neutrino-beam experiments.

Last year, the OPERA team made ultra-precise measurements of how long it took for neutrinos to make the 450-mile (732-kilometer) trip between the CERN particle physics lab on the French-Swiss border and Italy's Gran Sasso National Laboratory. When they took the speed of light and a wide variety of other experimental factors into consideration, they determined that the neutrinos arrived 60 nanoseconds before they should have.


If the results were to stand up, they'd mark the first failed test for Einstein's century-old theory. That's one reason why researchers found them so hard to believe, even though a repetition of the experiment yielded the same results. The OPERA team has been reviewing the entire experiment, and several other research groups have been trying to replicate it. A key concern has been the Global Positioning Satellite system used to clock the neutrinos' transit time. The measurements are required to be so precise that the relativistic effects of Earth's gravitational field on the GPS system had to be taken into account.

Now sources familiar with the OPERA review say scientists have identified two potential problems with the experimental apparatus. One has to do with a fiber-optic connector that sends a GPS time stamp to the experiment's master clock. That connector may not have been functioning correctly when the neutrino-timing measurements were made, and as a result, the recorded flight time would be shorter than the actual time. That alone could explain the seemingly faster-than-light results.

Another potential problem has to do with the oscillator that was used to generate the time stamps for GPS synchronization. This problem could have made the flight time look longer than it really was.

The sources I contacted via email declined to be identified because they weren't authorized to speak in advance of Thursday's scheduled statement. One of the scientists said the glitches should not be characterized as "errors," but instead as "nasty instrumental effects."

CERN spokesman James Gillies confirmed that the GPS connector problem was being investigated, but he emphasized that the effects still had to be confirmed. "More beam will be needed before we know for sure," he told me in an email. Tests with short pulsed beams have been scheduled for May.

Delegates from 26 countries opposed to a new EU carbon tax on airlines are meeting in Moscow to consider possible retaliation, amid fears of a trade war.

China, India, Russia and the US are among the countries opposed to the EU fee, which took effect on 1 January.

Critics say the EU has no right to impose taxes on flights to or from destinations outside Europe.

But in December the European Court of Justice ruled that the EU tax on CO2 pollution from aircraft was legal.

The Emissions Trading Scheme (ETS) creates permits for carbon emissions. Airlines that exceed their allowances will have to buy extra permits, as an incentive to airlines to pollute less.

Most of the EU carbon credits this year will be granted free, however the airlines must buy or trade credits to cover the rest, and the cost increases from 2013 onwards.

The numbers associated with Asian gaming are truly staggering and look to get bigger, but will they come back down to earth? European gaming growth is steady but, thanks to the Euro credit crisis, nowhere near as dramatic as the Asia-Pacific sector. What impact liberalization laws will have on Euro gaming is still up in the air. But it?s clear that governments play a big role in keeping gaming revenues high during a recession.

One reason gambling revenues are soaring during a worldwide recession is that there are more legal gambling options than ever. Governments that once frowned on legal gaming are changing their tune when faced with decreased tax revenue from property and sales taxes.

(AP) ? Greece won a second massive financial bailout in the early hours of Tuesday morning when its partners in the 17-country eurozone finally stitched together a euro130 billion ($170 billion) rescue, meant to avoid a potentially disastrous default and secure the euro currency.

But the patchwork of measures, including the implementation of more austerity in Greece and approval by skeptical German and Dutch Parliaments, required to give the rescue even a chance of success mean that it's unlikely to be the end of the continent's debt crisis.

Markets responded cautiously to the long-awaited deal, though the euro managed to eke out some gains as the fear of a disorderly Greek debt default within a month diminished.

The finance ministers from Greece and the other 16 countries that use the euro as their currency wrangled until the early morning hours over the details of the rescue, squeezing last-minute concessions out of private holders of Greek debt.

The eurozone and the International Monetary Fund, which will be providing the money for the new bailout, hope the new program will eventually put Greece back into a position where it can survive without external support and secure its place in the euro currency union.

The accord, which had been months in the making, seeks to reduce Greece's massive debts on all fronts, with both private and official creditors going beyond what they had said was possible in the past.

On top of the new rescue loans, Athens will also ask banks and other investment funds to forgive it some euro107 billion ($142 billion) in debt, while the European Central Bank and national central banks in the eurozone will forgo profits on their holdings.

But despite those unprecedented efforts, it was clear that Greece, which kicked off Europe's debt crisis two years ago, was at the very best starting on a long and painful road to recovery. At the worst, the new program would push the country even deeper into recession and see it default on its debts further down the line.

"It's not an easy (program), it's an ambitious one," said Christine Lagarde, the head of the IMF, adding that there were significant risks that Greece's economy could not grow as much as its international creditors were hoping.

The eurozone ? and Greece ? had been under pressure to reach an accord quickly to prevent Athens from defaulting on a euro14.5 billion ($19.2 billion) bond payment on March 20. The fear is that an uncontrolled bankruptcy even of relatively small Greece could unleash market panic across the rest of the continent. That would further unsettle other struggling countries like Ireland, Portugal or the much bigger Italy or Spain.

Despite the promise of new rescue loans, which come on top of a euro110 billion ($146 billion) bailout granted in 2010, the other 16 euro countries made clear that their trust in Greece is running low. Before Athens will see any new funds, it has to put into practice a whole range of previously promised cuts and reforms.

More significantly, Greece will have to pass within the next two months a new law that gives paying off the country's debts legal priority over funding government services. In the meantime, Athens has to set up a kind of escrow account, managed separately from its main budget, that will at all times have to contain enough money to service its debts for the coming three months.

These requirements, together with tighter on-the-ground monitoring, are an unprecedented intrusion into the fiscal affairs of a sovereign state in Europe and could eventually see Greece being forced to pay interest on its debt before compensating teachers, doctors and other state employees.

Greek politicians nevertheless greeted the package as a turning point for their battered country.

"It's no exaggeration to say that today is a historic day for the Greek economy," said Greek Premier Lucas Papademos, who had rushed to the finance ministers' meeting to lend weight to his country's pleas for help.

The eurozone and the IMF said the deal is expected to bring Greece's debt down to 120.5 percent of gross domestic product by 2020 ? around the maximum that they consider sustainable. At the moment, Greece's debt stands at more than 160 percent of GDP.

The euro spiked 0.5 percent to $1.3264 following the deal but stock markets in Europe were trading slightly lower, having enjoyed solid gains in the run-up to the meeting on the expectation that a deal would be secured.

Even some of the politicians who had pushed hardest for sticking close to the 120 percent target first set out in October conceded that it was questionable whether that level was indeed manageable for such a week economy as Greece.

"One can discuss at length the assumptions on which this (target) is based," German Finance Minister Wolfgang Schaeuble said after the meeting. "Because of that we decided to at least be sincere about the figures."

Ahead of the meeting, Greece's international creditors ? the EU, the ECB and the IMF ? warned that without new measures the debt would still remain close to 129 percent by the end of the decade even under its optimistic scenario. That shortfall persisted even though Athens had faced down violent protests to pass a massive new round of cuts and reforms through Parliament just last week.

So to reach a successful outcome, the finance ministers had to fight on many fronts.

The representatives of private holders of Greek debt had to agree to steeper losses than they had previously said was possible in a voluntary debt relief. The Institute of International Finance said that the bond swap could see Greece's debt reduced by euro107 billion immediately. On top of that, investors will be asked to give Athens 30 years to repay them, compared with just under 7 years. Average interest rates, meanwhile, would fall to 3.65 percent from around 4.8 percent.

Private investors weren't the only ones having to give ground.

The eurozone countries will reduce the interest that Greece has to pay for its first package of bailout loans to 1.5 percentage points over market rates from between 2 percentage points to 3 percentage points currently, cutting both its debt load and limiting the need for new rescue loans.

At the same time, the European Central Bank and the national central banks in the countries that use the euro will forego profits on their Greek debt holdings, again reducing the costs for Greece.

"It's a very good accord in the sense that it is equitably divvied up," said French Finance Minister Francois Baroin. "The Greeks have made their efforts. The Europeans are playing their supporting role, in their role as creditors ... And the private sector part goes beyond" what could be expected.

But several hurdles remain before Greece will see any of the money or other benefits of the new program.

Apart from the implementation of more than 30 different savings and reform measures by Greece, the new bailout has to be debated by parliaments in several member states, including Germany, the Netherlands and Finland.

The IMF also still has to decide how much of the euro130 billion bill it is willing to stump up. Going into the meeting, the Washington-based fund had indicated that its contribution will be lower than the one-third of the total it has provided in previous bailouts.

The IMF's Lagarde said the fund's board would decide on its contribution in the second week of March.

"In doing so it will have in mind the overall program, but also additional matters such as the proper setting up of a decent firewall," Lagarde said with reference to Europe's current and future bailout funds.

At the moment, the overall ceiling for eurozone rescue loans has been set ateuro500 billion ($663 billion), much of which has already been committed to Ireland, Portugal and now Greece. Euro leaders will decide at their summit in early March whether that ceiling should be increased.

On top of that, it will also take some time to see how many private creditors will participate in the debt relief and how many of them will have to be forced to sign up through new legal clauses Greece plans to implement. Some analysts fear that imposing losses on even some bondholders may destabilize markets.

Perhaps most crucially, however, may be new national elections in Greece scheduled for April, which could upend the political landscape in the country. The leaders of the two main parties have committed to the cuts and reform program, but anti-bailout parties have been gaining in the polls.
